The secret to make your pita puff is moisture.   I was so excited watching all of my pita puff in the oven.  Amazing!  I was literally sitting on my knees watching the process.

I've used a bread machine to make my dough.  

I used was:

1 cup and 1/4 of water
2 t of salt
1 T of honey
2 T of olive oil
3 cups and 1/4 of flour
2 t of yeast 
The bread machine did all the work in 1h 30 min.  Afterwards, I just made small balls of dough and let them rest for 20 min. I covered them with a moist towel.

In 20 to 30 min make the discs and let them rest for another 10 to 20 min with a moist towel on top.

Preheat the oven at 475°F. Have an oven shelf at the lowest level and place a baking stone, on it before preheating.

Voila!  The tastier pita ever.
