chicken satay

Marinade:

1 cup plain yogurt
1 tsp freshly grated ginger
1 tsp minced garlic
1 tbs curry powder 
1 1/2 pounds chicken breasts

Let the chicken breast marinade at least for two hours.  Thread the chicken pieces onto the soaked skewers.  Grill it for 4-6 minutes on each side. 


Here is my favorite part the peanut sauce:

1 cup smooth peanut butter
1/4 soy sauce
2 tsp red chili paste 
2 tbs brown sugar
2 limes, juiced 
1/2 cup hot water 
1/4 cup chopped peanuts for garnish 

Mix everything but the hot water in a food processor and puree.  Drizzle in the hot water while the motor is running to thin out the sauce.

Voila!  I had this dish for dinner the other night it was easy to make and very tasty.
