lamb stew with couscous

Today I cooked brunch with a friend of mine, we made a Moroccan stew.

We started off with a warm cup of mint tea, semolina pancakes and Moroccan cookies made by my friend's Mom.  Delicious!

After we had our tea and treats, we started our  Moroccan lamb dish.  It was so much fun!  

I'm very happy for having amazing friends who can teach me great things.

The best part about learning to cook the stew was eating it.

To make the dish you will need a couscousier and the following ingredients:

3c of couscous, 
2 lb lamb, 
1 large onion, 
2 turnips, 
2 carrots, 
2 zucchinis, 
4 potatoes, 
1 small squash, 
4 tomatoes 
1 green chili pepper, 
1T ginger, 
1/2 T salt, 
1/2t black pepper, 
1T of dried parsley or a handful of fresh parsley.  

You can of course adjust this recipe to your taste.  If you like more meat or veggies feel free to play with the proportions!  It will turn out delicious anyway. 

Clean the veggies and slice them fairly thick in length wise.

1.  Place the lamb, the turnips, the carrots and the onions in the couscoussiere.  Add the spices and some olive oil.  Cook for about 10 minutes.


After 10 minutes add water covering the lamb and the veggies.



2.  Place 3 cups of couscous in a large bowl.  Add some oil (we used vegetable oil), about 3T some salt and mix well with your hands.   The point of mixing the couscous with the oil is to prevent it from sticking.  We will also add some cold water about 1/3 of a cup and mix again.  We want the couscous to be a little moist so it can cook properly.



3.  Place the couscous in the second pot of the couscoussier.  Add it to the other pot.  Which should be boiling, be careful!  You don't want the water to touch the second pot, the couscous.  Let it cook for 15 min.


4.  Take the couscous off the pot and pour it back in the large bowl.  Again add some oil mixing well.  Add about 2 to 3 handfuls of water mixing again.  The texture should be moist and soft.  You don't want it to be too wet! 




5.  Place the couscous again over the pot.  Let it cook for another 15 min.



6.  Repeat again the fourth  step.  This time add the rest of the veggies to the stew, the whole tomatoes, the zucchinis, the potatoes and the chili pepper.  Place the pot of couscous over and let it simmer for another 15 min.



Make sure the heat is on medium so that the broth does't boil into the couscous semolina.
